Learn to cook seafood with confidence at this Sydney institution cooking school.

Situated at Sydney Fish Market in Pyrmont, the school has been operating for many years – I did my first Seafood BBQ class there 15 years ago and still use the recipes!

They have an array of regular favourites including a Thai Seafood cooking class, which has participants starting off in Chinatown, and learning how to select authentic ingredients from the Thai grocers. Then it’s back to the auditorium classroom to watch the experts demonstrate in the professional kitchen.

You don’t get off lightly, because then it’s your turn. After seeing the dishes made, students break into groups in the kitchen, share the tasks, and get to work preparing a Thai Seafood banquet. All of this is then served in the communal dining room, paired with some local wines.

Other courses on offer are Boullibaise; Sushi; and an array of classes with Sydney’s Celebrity Chefs. Dan Hong’s class was one of my personal favourites.

You get a recipe booklet with a step by step guide, so it’s easy to replicate at home.
